Fermentation and preservation allow you to store food without spoiling or sacrificing quality, taste, or nutritional value. In fact, with many fermented foods, texture, taste, and nutritional value are all enhanced. It’s healthy for us, but how is fermenting and preserving food healthy for our environment?
